Harvest
Before entering the processing facilities, eacholive undergoes a meticulous inspection. This scrutiny checks for any signs of disease, defects, or presence of insects. Additionally, unwanted elements like leaves, wood sticks, and other foreign particles are removed. Olives are typically harvested in the fall when they have reached the desired level of ripeness. Mechanical methods or handpicking are employed to collect the olives. Mechanical harvesting is more common for larger olive groves.
Extraction
After harvesting, the olives are sorted to remove leaves, stems, and other debris. Cleaning may involve washing the olives to remove dirt and contaminants.The cleaned olives are then crushed or ground into a paste. Traditionally, this was done using large stone mills or presses. Modern facilities may use stainless steel crushers to create a homogenous olive paste.The olive paste is stirred or kneaded in a process called malaxation. This helps break down the oil droplets into smaller sizes, aiding in the extraction process. This step is crucial for maximizing oil extraction efficiency and quality.In traditional methods, the olive paste is pressed to extract the oil. Hydraulic presses are often used for this purpose. The pressing process separates the oil from the rest of the olive paste, leaving behind a mixture of oil and water.
Processing
The oil and water mixture obtained from pressing is then separated. This can be done through the use of a centrifuge, which exploits the different densities of oil and water.The separated oil may still contain impurities or sediment. It is common to clarify the oil by allowing it to settle or by using additional filtering methods.
Packaging
The final, clarified olive oil is stored in stainless steel containers or other inert materials to prevent any interactions with the oil that might affect its quality.
