Harvest​

The Kalamon olives are typically harvested from late October to December. Renowned for their distinctive taste, smooth texture, and rich, dark color when fully ripened, they are meticulously handpicked by workers on ladders and collected in plastic baskets with great care. In order to be approved to enter our facilities, they are thoroughly checked for disease, defects, insects, leaves, wood sticks and other foreign particles, and all fruits must have a uniform, natural colouring.

Process

Before entering the processing facilities, each Kalamon olive undergoes a meticulous inspection. This scrutiny checks for any signs of disease, defects, or presence of insects. Additionally, unwanted elements like leaves, wood sticks, and other foreign particles are removed. Crucially, the olives must exhibit a uniform, natural black coloring, a hallmark of their quality and readiness for further processing.
